Best Ever Sloppy Joes

Recipe: Best Ever Sloppy Joes

Ingredients

  • 2 lbs ground beef
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/4 cup chopped green peppers
  • 1 1/2 cups canned diced tomatoes
  • 1/4 cup catsup
  • 2 tablespoons brown sugar
  • 1 tablespoon vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon steak sauce
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground mustard
  • 1/2 teaspoon paprika

Instructions

  1. In Dutch oven, cook beef, onion, celery, and green pepper until meat is done; drain.
  2. Add all remaining ingredients.
  3. mix well.
  4. Simmer for 35 minutes, stirring occasionally.

Cooking time (duration): 50

Number of servings (yield): 8

Meal type: dinner

Paula Dean’s Broccoli Salad

Recipe: Paula Dean’s Broccoli Salad

Ingredients

  • 1 head broccoli
  • 6 to 8 slices cooked bacon, crumbled
  • 1/2 cup chopped red onion
  • 1/2 cup raisins, optional
  • 8 ounces sharp Cheddar, cut into very small chunks
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1/4 cup sugar
  • 1/2 cup halved cherry tomatoes
  • Salt and freshly ground black pepper

Instructions

  1. Trim off the large leaves from the broccoli stem.
  2. Remove the tough stalk at the end and wash broccoli head thoroughly.
  3. Cut the head into flowerets and the stem into bite-size pieces.
  4. Place in a large bowl.
  5. Add the crumbled bacon, onion, raisins if using, and cheese.
  6. In a small bowl, combine the remaining ingredients, stirring well.
  7. Add to broccoli mixture and toss gently.

Variations

Using Craisins instead of raisins would give a unique flavor

Favorite Chocolate Chip Cookie

Recipe: Favorite Chocolate Chip Cookie

Summary: These are definitely my favorite chocolate chip cookie!!

Ingredients

  • 1C butter
  • 1C sugar
  • 1C packed brown sugar
  • 1t vanilla
  • 2 eggs
  • 2 1/2C oatmeal split
  • 1/2t salt
  • 1t baking powder
  • 1t baking soda
  • 2C chocolate chips

Instructions

  1. Mix butter, sugar, broswn sugar, vanilla and eggs
  2. Blend 1/2 oatmeal (1 1/4 C) in blender until powdered
  3. Add oatmeal to salt, baking powder and baking soda
  4. Add wet ingredients and chocolate chips to dry ingredients
  5. Mix until combined
  6. Place rounded tablespoons on ungreased cookie sheets and bake for 10 minutes

These are awesome. My wife doesn’t make them any other way anymore.

Oil is NOT a fossil fuel?

Oil is NOT a fossil fuel and AGW is non-science.

Saw this article on Dvorak Uncensored.  Very interesting. 

I have also wondered how many dinosaurs used to be on earth to create the amount of oil we already have used, how did the dinosaurs, plants, etc. get so deep in the earths crust to actually form oil and I also wondered why haven’t all the organic material  that continues to die been adding to the oil reserve.  I guess the argument is “We use the oil quicker than we use it” but something still seemed a little weird. 

These quotes from the original article really make you go hmm.

“Stalin’s team of scientists and engineers found that oil is not a ‘fossil fuel’ but is a natural product of planet earth – the high-temperature, high-pressure continuous reaction between calcium carbonate and iron oxide – two of the most abundant compounds making up the earth’s crust.”

“This continuous reaction occurs  . . .  and will continue more or less until the ‘death’ of planet earth in millions of years’ time.”

And finally, the reason that this news isn’t widespread

“. . . the last people to tell us the truth about oil will be the oil producers and oil companies, for they of course have a vested interest in perpetuating the myth that oil is a fossil fuel and that it will soon be exhausted, in order to ratchet up the price for as long as they can.”

Kind of the starch out of  the ”Peak Oil” argument. 

Anyway, this is only one report that I’ve found on this so far.  Obviously it’s not conclusive.  However, it is an interesting thought problem.

Ginger Glazed Mahi

Recipe: Ginger Glazed Mahi

Summary: I love fish.

Ingredients

  • 2 mahi mahi fillets
  • 3 tablespoons honey
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon gingerroot, finely grated
  • 1 garlic cloves, minced
  • 1 teaspoon sesame oil
  • 2 teaspoons olive oil
  • salt and pepper
  • 1 tablespoon olive oil (reserved)

Instructions

  1. Mix all ingredients in a ziploc bag and add fish. Leave in fridge to marinate for up to 2 hours.
  2. Preheat oven to 400.
  3. In an oven safe skillet, heat 1 Tbsp olive oil on medium high heat.
  4. Place fish in skillet, but be careful–it will splatter a bit.
  5. Leave the fish to sizzle away for 5 minutes.
  6. Flip the fish over and place entire pan in the oven for 15 minutes.
